WIAW – what happens when I don’t meal plan
| March 5, 2013 | Posted by Carrie under What I Ate Wednesday |
Since I started working, I haven’t been doing that much cooking for my family. We do still have family dinners together as much as a family with busy kids can do, but I don’t do a lot of the cooking.
When I do cook, it’s usually more interesting than my picky eaters care to enjoy. But you all can enjoy a little WIAW.
The funniest part about not doing so much cooking lately, is that I’ve become a very disorganized cook. Last weekend, I had an avocado left from my last CSA box and decided that it needed to be taco night. And I wanted to make margaritas. When it came time to actually cook, I realized I needed to go to the store to get a few more things. Namely, taco seasoning, olives and lettuce for the tacos and salt for the margaritas. At least I had the meat, tortillas and cheese. 50% isn’t that bad. I seriously need to start doing some better menu planning.

what I had to get at the store to make the meal at the last minute – good planning
the margaritas were good
Then, last week, I was inspired by my friend Coco’s avocado baked egg and I *needed* to make one. My first try was a total fail. Petey pulled the foil off the counter and sent the egg flying to the floor.
I was able to make another one that was so yummy, I had to repeat it over the weekend. The 2nd time around, I made one for MMT, too. So amazingly yummy – the second time around, I got the runniness of the egg just right.
I had a ton of leftover cherry tomatoes from the nutrition lesson at my son’s school last week so I tried to make stewed tomatoes. There was absolutely no recipe involved here. I just cooked a little garlic in olive oil, added the tomatoes and more of my frozen stash of turkey broth and cooked for a long time.
the cooked tomatoes are actually best served cold – yes, I am standing outside eating a bowl of cold tomatoes – hey, my kid wanted me to watch him shoot baskets, I can multi-task
And finally – I wrote a whole post a while back about packing great lunches… but, let me be perfectly honest and say that I’ve gotten lazy. I’ve fallen out of the routine of making those awesome lunches, and usually just pack a sandwich. While I’d love to have nut butter and jelly sandwiches every day, I usually end up with lunch meat. At least I’ve found this great and little bit healthier lunch meat option at the regular grocery store. I love all the natural and organic products that are becoming easier to find.
Ever been inspired by one ingredient for a meal and then realize you don’t have anything else you need to make that meal? Please tell me I’m not the only one.

That avocado baked egg looks yummy! Haven’t done much meal planning here lately either which has led to all kinds of random dinners!

The avocado egg was great. It totally needs a runny yolk.
I do the same when I don’t meal plan… I tend to assume I have ingredients on hand that I don’t, so frustrating! But I’m sure you’ll get into a rhythm soon. Working is an adjustment!

Thanks. I feel we are getting in to a routine with everything else. It’s just the meal planning that is slacking. Last night, we all sat down to Subway sandwiches together.
Yum that avocado egg looks so good! How long do you bake it?

425* for 10 minutes. Keep an eye on it to get the right runny-ness. Use a big avocado, my little CSA ones overflowed too much. I’m obsessed since Coco blogged about them on WIAW last week.
That egg creation looks yummers!

That avocado bake looks cool!!! I have never seen that!
Life attacks us sometimes.. all we can do is just move on & keep on trying…. You are trying with your lunches & that is good.. and YES, I have wanted to make something plenty of times & not the stuff in the house!

Thanks for that – my sandwich is way better than some other options, so I go with that.
At least you ran out to the store — I just try to wing it. I remember when I sliced up sliced cheddar cheese into bits to use for tacos …..Glad you got the egg to work!

Hee hee! I’ve been known to shred a piece of sliced cheese to throw on a quesadilla for a kid.
Not having a meal plan is frustrating and for me more time consuming than it takes to meal plan. KWIM? You’ll get back into the swing of things Carrie…no doubt!

You’re so right. I do tend to plan out the week loosely – at least I put in my head if there are nights during the week that I can cook. Then I fail on looking through my pantry/freezer to see what goes with my plan. It’ll all come together soon. Thanks!
I don’t always meal plan per se, but I ALWAYS have a certain list of things (veggies, canned beans, frozen meats etc) on hand for those days. Also I am lucky to have a microwave at work, so I just make big pots of soup or portions of pasta and take them to work and/or eat them for dinner during the week. Otherwise I would be standing up eating a bowl of broccoli or something for dinner most nights.
