What I Ate Wednesday – WIAW #16
It’s a new month, so the awesome Jen at Peas and Crayons has come up with a new theme for What I Ate Wednesday.
July’s theme is Food & Fitness! Cool – two of my favorite things! Jen is asking us to share a little of our fitness passion with our food passion these next few weeks.
So, as far as the fitness front goes, this past weekend, I ran a 10K with my friend. Read the recap here. It was only my 2nd 10K and I’ve decided that it’s my favorite distance. Besides, it’s long enough to work up a decent appetite. After the race, K and I went to a local diner for a yummy breakfast. (Yay for combining food and fitness, right?)
This particular diner had been featured on Food Network’s Diners Drive Ins and Dives at some point. They are known for their fantastic biscuits. Sounds like a perfect post race treat! Well, K ordered one for us to share. YUM!
That’s K’s Chorizo breakfast scramble in the background with more potatoes than could feed the whole restaurant.
I went with the pancakes of course. I saw that a short stack was 2 pancakes and a full was 3. Well, I was hungry, so I ordered the full stack – it was only 1 more pancake, right? I should have known that I ordered too much food when the server had to do a little double take on my order. Here’s my plate.
Yea, I met my match. I had half and the rest for dinner later in the evening. Still yummy. They were gooey instead of fluffy. Really really yummy. I still prefer a fluffy pancake, but it was yummy to have something different.
Remember last week that I was talking about my CSA beets? Well, I finally got a chance to roast them yesterday. I put a tiny bit of olive oil on them and wrapped them in tin foil and roasted them at 375* for about an hour. I put a little salt on them and they were awesome!
I can see how slicing up a whole slew of beets could make it seem like a mass murder happened in your kitchen.
And finally – we did a ton of baking the other day. We are going on vacation in a few days and were stocking up with the treats. We are going to be spending a week on a houseboat with two other families, so the treats are now in the freezer waiting for their adventure.
We made two kinds of cookies with the basic Nestle Tollhouse Recipe.
Two kinds of Rice Krispie treats.
I also made a batch of banana muffins (for the car ride, they’re not going to survive the lake weather). Why can’t I get my recipe to make complete trays? Never happens.
Happy 4th of July everyone! More food and fitness today – beginning with the local 4th of July 5K and then food and friends for the afternoon.

I especially love how easy Rice Krispie Treats are… yet so amazingly yummy. And, they’re totally something I’ll never eat store bought. Must be homemade.
Ooooh,rice krispie treats! I love those,they’re clearly one of my favorite treats ever! I love how you aded M&Ms (?) so they look pretty and colorful!

those pancakes look heavenly, regardless if they were as big as the restaurant. haha.
Yum! Those treats look so good! I usually short change my trays a bit and then go back and dribble to fill them up so that I fill all the pots.
