What I Ate Wednesday – Snacking!
I finally got my act together this week to take some pictures of some snacks for What I Ate Wednesday.

I did take some meal pictures this week. From my lunch date this past weekend with MMT. We had an amazing cheese plate appetizer. The cheese in the bottom right corner was a blueberry covered goat cheese. To die for.
I had a beet and avocado salad for my lunch after all that yummy cheese. The salad had a walnut vinaigrette on it, the flavors were amazing. And those are the sweet potato fries in the background that we shared.
And a couple of dinners that I made at home.
Enchiladas stuffed with onion, zucchini and bell peppers and ground beef.
I actually did some meal planning this week. And, it seems like sweet potato fries had a big role in this week’s eats. We received a big bag of yams in our CSA box, I must try to be more creative with the rest. Any ideas?
Also, I got a bunch of beets in the CSA box. I have learned to love beets (especially on a salad), but I’ve never prepared them. I’d love some suggestions.
There are so many great recipes for sweet potatoes! And the sweet potato fries are one of my favorite post-race indulgences
I’ve had some really bad sweet potato fries at restaurants. It kind of bugs that restaurants are jumping on the bandwagon. They’re still fries.

I am actually trying beets for the first time tonight. I can’t decide if I want to roast them and do a beet and yogurt salad or do beet “chips” with my sweet potato chips in the oven.
Beet chips! Love that idea. I think I’m going to make beet and sweet potato chips together. YUM! I’ll let you know how it goes.
I ending up roasting them along with the sweet potatoes, but not as chips. I just scrubbed them and put them in foil. 50 min on 425 (which is the time it takes the potatoes to cook). Then I took the potatoes out and left them in the oven on warm for an hour. Then my daughter and I just peeled, chopped and put the on quinoa. I’m surprised because she actually ate them ALL up.

that sweet potato fry dinner really was all my favorites. plus celery and PB….YUMMMMMMM!
funny thing – I’ve been eating a lot of almond butter lately and the peanut butter wasn’t really that yummy. I love my almond butter.
I just found out I have a mild peanut allergy so I switched to almond and sunflower seed butter. Have you tried sunflower seed butter? It’s called “Sun Butter”. It’s REALLY good.

I love Sun Butter. It’s got such a different flavor that I usually only eat it as a snack on some crackers. Although celery would probably be fine, too. I usually eat my almond butter pre-run, and the sun butter just doesn’t give me the same yumminess then. Such a creature of habit I am.
Yum! I shouldn’t have come here hungry! I make a yam potato salad that has a southwestern chipotle kick. I grew beets this year but hardly any came up so far. Im the only one here who like them anyway.
Awesome that you grew beets. I’ve got an empty garden waiting to grow some things for me. But, I’d be the only one to eat them too, so maybe I won’t plant them.
I love to eat beets but I’ve never cooked them either!

I think I’m going to try beet chips. I’ve heard they’ll make my fingers purple… my son will probably find that fun. We’ll see how it goes.
I love both beets and sweet potatoes! I usually just roast both of them. Wash them, put a little olive oil (or not) and cover in foil (wrap well so it steams inside) and then cook for about an hour. Then I cut it and eat it with a little more olive oil and salt and pepper. Simple, easy, delicious!
