I haven’t shared a What I Ate Wednesday post in a while, so here’s getting back to sharing some yummy food. Thank you Jen at Peas and Crayons for hosting the food fest link up.
First, last night I made the most amazing meal. Seriously, I can still taste it (in a good way). I love Indian food, but I’m alone in my house on that preference. So, last night I knew that I was just cooking for me, so I made a healthified Chicken Tikka Masala recipe that I saw on Tina’s blog from a guest post by Melissa at Live, Love & Run.
Not only did it taste amazing, but it made my house smell amazing. And, I didn’t have Corriander. Must make it again when I remember to pick some up. Yes, I had Garam Masala in my house, but no Corriander.
The preparation for the chicken marinade:
Preparing the sauce – the simmering tomato based sauce made quite a mess on my stove.
Stirring in the yogurt as a final step and then mixing it together. The recipe calls to serve it over rice, but I didn’t feel like making any, and I had a chunk of baguette from Farmer’s Market over the weekend that did an amazing job of mopping up the sauce.
There were yummy meals from earlier in the week, too. The other day I made this amazing salad topped with some pomegranate seeds from my CSA box and dressed with a bit of this blood orange flavored olive oil that was fantastic. The bottom picture is the peanut sauce noodles I made last week that was also yummy.
Now for more indulgent fare: on Saturday after my run, we were at the park watching Dude’s football game and MMT picked up this breakfast burrito that we shared. It was amazing. Then, dinner another night, we went to this dumpy greasy spoon that’s actually in a local liquor store and had a great meal. My portabello sandwich was awesome as were the truffle parmesan fries. YUM!
And finally, I made a new pancake variation this past weekend. After cooking stacks of pancakes for the girls after the slumber party on Sunday morning, I decided to lighten up my favorite new pancake recipe. This one was 1/2 cup ground oats, 1/2 banana, 1 egg white and a tsp. baking powder with blueberries and a sprinkle of choc chips. It was awesome. My new go-to-non-post-workout pancake recipe.

Can I please have some indian food right now?? Oh, it’s so good. Those pancakes look great too. I’ve done a recipe similar to that but I don’t grind the oatmeal. Is that what you did? Yours look better. lol.
I have made them with 1/4 c oats and 1/4 c whole wheat flour and not ground up the oats. But, this time I used more oats and ground them. Lightened them up and I really liked them a lot better.
I’ll have to try that. I like the ones with wheat flour but I can’t have too much wheat anymore. They are good with a bit of pumpkin puree in them too!

I haven’t had much Indian food, really. My WW friend came up with a Butterless Butter Chicken recipe which I make a lot and is on my blog, and it might be like your Chicken here. Looks similar.

I love Indian food too, but the smell lasts for a couple of days after! I can’t avoid cooking it since my hubby loves it so much, so I’ll be trying this recipe in the near future

Oooh, pumpkin would be good – I’ve also mixed in a tablespoon or two of greek yogurt.

They almost always are yummy. I think I take a picture every time I make them, I’m so enamored by them. Such an exciting life I lead.
All of that looks wonderful… I also saw garlic fries and that is an obvious favorite.
