I almost forgot that today is Wednesday. With the holiday and a wacky day yesterday (more on that below) and the fact that my kids don’t start school until tomorrow, I’m hard pressed to know the day of the week.
Today, I’m blogging from my phone. Yesterday, my computer died. The blue screen of death. Awful.
I knew something was up. I started to back things up and then it went belly up in the middle. I spent way too much time and money and I’m still not sure if the data can be recovered. Fingers crossed. I do have some things backed up, but it’s been a while and I will lose pictures and files.
But, I do have some yummy eats from the week to share for What I Ate Wednesday.
Yesterday, I roasted some beets and then made this creation. Sautéed kale and peppers with some quinoa and topped with a huge roasted beet. I added a little Italian dressing and it was one of the most flavorful lunches I’d had in a long time.
My CSA delivery from yesterday was so pretty and colorful, it needed a picture.
And another creation of a salad sprinkled with some quinoa (can you tell I have a batch cooked and ready in my fridge?) and a veggie patty on top.
Post race pancakes from Monday. I made the yummy almond butter pancakes with oats and added in a mushy banana from my freezer. That took care of the dryness of the last batch of pancakes, but then the almond butter flavor got a little lost. Still awesome.
Speaking of pancakes – did you see the spread in Runner’s World? Drooling here! And, on the page listing favorite pancake chains was our local favorite – The Original Pancake House. I pass that place on my running route to the beach and dream of pancakes.
Also, my apologies for the lack of commenting on your blogs this next week or so while my computer is out. That’s such a pain to do on my phone. I’m reading!

Oh no, Carrie! So sorry to hear about the computer crash… mine is nearing the end too and I should probably brace myself for it and be prepared so it doesn’t completely stress me out!

Computers are pesky critters at times. At times i just want to smear almond butter all over mine and eat it. But then I’ve been taught by fellow bloggers that i cannot eat my problems away.
