I’m no Julia Child. I consider myself an adequate cook. I can follow a recipe and I’m becoming pretty good at adapting pancake recipes. So, imagine my happiness at the results of my efforts to be creative with my Nature BoxDried Figs.
Dried Fig and Strawberry Jam
1/2 cup chopped dried figs, simmer for 20 minutes in 1/2 cup water. Add a little more water if too much evaporates during cooking (I did add a little). Add 1/4 cup-ish frozen chopped strawberries for the last 2 minutes of cooking. Put in blender with a squeeze of lemon juice and a pinch of salt. Blend. Eat. Easy.
It even made a fantastic almond butter and fig jam sandwich for lunch.
And then there was a little left, so I mixed it in my overnight oats with some almond butter drizzled on top. AB&J overnight oats were a huge success (there are some blueberries in there too).
A yummy lunch from the week: spaghetti squash with marinara sauce, quinoa, fresh tomatoes and shredded parmesan. Yum!
And then the indulgence from the week. We hunted down the Grilled Cheese Truck on Sunday night. This was our second visit, you can read about the first visit here. I had the brie and caramelized onion grilled cheese again. Yum. But, the sandwiches were actually better on the first visit.
Those caramelized onions prompted me to try to make my own to go on top of a pizza last night. They didn’t really caramelize very well, you have to do that slowly, right? And, my pizza rolling skills are seriously lacking. But, you can tell the pizzas are homemade, right?

I’m giggling at the shape of your pizza but I’m sure it tasted awesome! I LOVE carmelized onions (but not any other kind). The pasta looks amazing, too.
The figs look delish! I’ve been slicing some up for breakfast and inside my salads Oh my gosh, we had the Grilled Cheese Truck last night! I had the fully loaded (with BBQ pork and mac and cheese on wheat) but was debating the Havarti combo with pesto. Mmmm I can always go for cheese
That all looks yummy! The only tip I have for pizza crust is that you roll it in a ball first and the roll it in an X shape, up and down, then side to side, to keep it round. The bread in the picture was actually a gluten free bread. Have you found any good ones, this one is from Udi (if I remember correctly) and it was good.

Great idea. I did use a rolling pin, but started in more of a rectangle shape. It was good, so I will be doing it again.
I have big problems with gluten so I can’t eat any bread. I miss eating bread though.
