What I Ate Wednesday – WIAW #18
It’s Wednesday again! After Monday’s doggy love fest, my trouble-maker husband asked me what I’d do if the 23rd of a month fell on a What I Ate Wednesday. How would I combine doggy love with food? Maybe share my dogs’ food? Wow, that’d make a great blog post, huh?
Anyway, after my blow-by-blow recap last week of a day of food, I will spare you that this week. Besides, breakfast is the same thing 90% of the time. Overnight oats. I did take a picture of my breakfast yesterday morning, but mainly because I was wild and crazy and put in a nectarine instead of my usual blueberries. I know… crazy, huh? Even crazier… I bought a mango at the store yesterday – that’s going in breakfast today.
After my weekend run with my friend K, we visited the Farmers Market and I picked up some amazing heirloom tomatoes. I worked them in to two different lunches.
First: spaghetti squash with a little marinara sauce, the tomatoes and an avocado. I sprinkled a little parmesan on top. If I had all the ingredients on hand on a regular basis, this would be a frequent lunch, it was amazing.
Second was lightly breaded tofu and the tomatoes in tacos. I wasn’t sure how well little round tomatoes would work in a taco. Let me tell you, round things roll. This may have been the messiest meal I’ve made in a while. I ended up smooshing the tomatoes so they’d stay put better. While the flavors were great, I’d probably not make this one again. Or at least I’d chop up the tomatoes.
Overall, I’m still going strong on making really good food choices and logging my food each day. I still don’t weigh myself on a regular basis since that’s a slippery slope for me, but I know I’m feeling better and that’s what counts.

On the fitness end of things, after essentially resting on Monday, I went for a great three mil run yesterday, my crazy DOMS is all better. I’m pretty excited as tonight I’m going to a new class at my gym. If you read my post a while back about my daughter’s dance teacher who is looking in to my RD program? Well, she’s also now teaching two group fitness classes at my gym and I’m going tonight to her first class to support her and let her kick my butt at the same time.

Mmmm spaghetti squash! I haven’t had any since winter, but after seeing the picture of yours, I am totally craving a big bowl of it!

I have no seasonal preference for food – hot soup in the summer, etc. I do love spaghetti squash. So versatile.
Your spaghetti squash looks SO good. I heart avocados. I’ve been putting them on my scrambled eggs in the morning (along with a ton of hot sauce and salsa! hmmm)

I had lunch with my cousin yesterday who doesn’t like avocados – I think something is wrong with her.
I have a friend who is a fitness instructor too. It’s a little odd to mentally curse out a buddy in the middle of (what feels like) 37 sets of jump squats, but I love her even more when it’s over.

Yes, the workouts go on and on when your muscles are twitching. She did kick my butt, but I’m feeling okay today.
I love little tomatoes, but I could see how they would be a pain!

The tomatoes were awesome. I didn’t even think that the construction would be a problem until I was putting it all together. Oops.

ha!! I had that same thought a while back about 23Paws falling on a Wednesday. I just checked the calendar and looks like that won’t happen until January…so we have lots of time to plan how we will attack that one. LOL. I like the Idea of sharing what our dogs ate. Hysterical!!
When I saw that pic of your tomato, avocado, squash salad on Instagram I showed it to Paul right away and was like….oh man look at THIS!! And we might have both drooled a little bit over it.

I never would have thought of the tofu and tomato taco idea, but now I will have to try it out! Looks delicious!:)

Food fail, yep indeed; tried to make a veggie soup from stuff I had in house, didn’t follow a recipe. After some hours in crock pot, it just looked way to watery, thin. So instead of just removing some of the broth, I got this notion to thicken it up a bit with corn starch… Yeah, used way too much. It became thicker than stew and was just no fun to look at let alone eat.

Thanks. My favorite part about making spaghetti squash is getting two meals out of it.
Aren’t the nectarines (and peaches) so good right now!? My dad brought me a flat of peaches and I have been eating one (or three!) every day! I love summer! Your tomato taco does sound good, but yes, I bet it was a mess! At Thanksgiving last year, my cousin made these huge bruschetta with shrimp and so you couldn’t fit the whole thing in your mouth but when you bit it, shrimp went all over the floor! They were good but my aunt is probably still finding little shrimp bits on her carpet!

Shrimp bruschetta sounds like a good idea in theory. Funny story.
