What I Ate Wednesday

I had a very good reminder yesterday about the importance of listening to your body. I was exhausted this weekend, slept late (for me) both days and took a 2 hour nap on Saturday. I still got up early to go to bootcamp on Monday morning but then crashed in bed at 10:00. I did learn that the secret to making it through the day without nodding off is to essentially never sit down. By the time I was ready to be done at 9:45, I easily went to bed. I decided to sleep through my workout Tuesday morning. Although that still meant getting up at 5:30, but I messed around on the computer and decided to take the day off. Bootcamp Monday morning left me rather sore, so besides being tired, I just couldn’t think of a good workout to do to rest and recover, so I decided it was okay to take the day off.
I’m feeling human again. Back to the regularly scheduled routine.
I miss when I can’t blog every day. Although I know I ramble on and on, this and working out are my therapy. Days off from both things are good too, right?
On to What I Ate Wednesday…
I’ve written often about how I work in a tiny little office. I like to think about why this is an awesome situation – but a few related to food are these:
1) no office kitchen where people bring their leftover treats to pawn off at the office = no temptations and mindless junky snacking.
2) I’m in control of what I eat during the day – I pack my lunch almost every day which ensures that I eat well and saves me tons of $$
3) There isn’t a birthday every day – there are 3 of us. Since I’ve only been there since January, we actually haven’t celebrated anyone’s birthdays yet. But, I’m guessing that based on what I’ve learned about everyone so far, birthdays aren’t a big deal.
I did have grand plans at the beginning of these amazing lunches that I’d put together. But, now that I’m squeezing in my workouts every morning, lunch time packing is a little more rushed. That doesn’t mean I still don’t pack something, it just means that it’s typically a sandwich. My goal for my food for the day is an apple for a morning snack and then usually another piece of fruit for afternoon snack and some fresh veggies to go with my sandwich. My afternoon snack is often beef jerky or something a little more snacky like from my Nature Box (mixed nuts, granola, peanut butter oat cookie – yum!) My sandwich is often a hard boiled egg or some all natural lunch meats and hopefully with avocado. The fruits and veggies are almost always from my CSA box – it’s been a great way for me to make sure I”m having a good variety of fresh stuff.
I have to pack lunches for my kids every morning, so it’s just an assembly line of lunch packing.
I do find that sometimes by the end of the day I’m feeling a little hungry. I think it’s a mental thing because it’s usually not 2 hours since I had my snack, I think it’s more that I know I don’t have anything else stashed away, so I think I’m hungry. Most days I leave and go home and get busy and don’t eat right away anyway, so I know it’s not a true hunger. And, no, I don’t want to have a stash of any more food, I’ll just eat it because I ‘think’ I’m hungry.
If I ever do actually feel like I’d collapse without having something to eat, there is a little neighborhood market across the parking lot – it’s not like I’m going to go hungry.
On to some other yummy eats from the week: I love runny yolks – I was so happy to finally have made two perfect eggs the other night for dinner. I put them on top of some roasted broccoli from my CSA box. Amazing dinner.
I have to share this awesome recipe. My blogger friend Elle shared this on her blog the other day – a grain free pizza crust. Basically egg whites and flax cooked in the microwave and then you bake it with toppings. I made it a little too thick, but it tasted awesome and was a great way to make a super healthy and single serving pizza. I topped it with sauce, cheese and avocados and fancy mushrooms both from my CSA box.
And a bonus: my awesome Mongolian BBQ creation from the other night. I think I’m loving broccoli these days.
