What do you do with your veggies on the verge of going bad?
I’ve got two plans of attack.
First – chop, saute and scramble in some eggs.
Plan B – chop, steam, blend and make soup.
My soup non-recipe turned out awesome. I had some frozen homemade chicken broth that I used to steam cauliflower, broccoli and zucchini there was some chopped fresh ginger in there too. Then I blended it all up and added a little curry and cayenne. Yum!

I do the same thing with mine! I either make soup or stew or I just make a big stir fry with them and eat them right away. Some of those soups turn out better than ones that I plan for! Travel Spot recently posted..Incredisocks

Soup is the best. I love having a freezer stash of soup I’ve made. Makes me happy.

There are many times that things get thrown away, but I do try to avoid it.

I hate throwing food away. Not that I don’t do it often, hope this helps.
I would have never thought to scramble some eggs and throw the veggies in with that.

Scrambled eggs are my go to quick dinner. Glad I can give you some ideas.
