Some tunes and What I Ate Wednesday
Some fun for today’s Blogger Challenge Topic: Put your ipod on shuffle and tell us the first 10 songs.
I think mine is a fun representation of me… first, I have a pre-teen daughter so there is leftover music from when she was younger, second – I enjoy classical music, and third – I need some good running music. Two of the songs are songs that Dancing Girl had downloaded a while ago for routines, too.
Need some tunes when I run.

I know today is Wednesday and I usually share some yummy food on Wednesdays… so, let’s see what I have from this past week. You’d think there was some good eats since it was my birthday and we had a lot of yummy food. But, I didn’t really take any pictures of the yummy food… bad blogger. Just trust me when I say it was all good.
But, here are a few things…What I Ate Wednesday…
Have you ever microwaved corn in the husk? I learned this technique recently and will never go back. The husk comes off nicely when you’re done. Just throw it in as is for 4-5 minutes.
Also this past week, I made some homemade almond butter. There is nothing easier to make than homemade nut butter. I highly recommend it. This was one pound of almonds, it costs less than $4 from a bulk bin. It made one full jar of nut butter. Keep in the fridge and it stays soft and creamy and is amazing. Let it go in your blender for about 15 minutes – add nothing.
I created a recipe last week that turned out quite well. I shredded a zucchini from my CSA box into some ground beef and seasoned it pretty well. I then mixed in a bit of cheese and put it in some baked won ton wrapper and baked it all together for a bit. YUMMY!
And, finally… my blogger friend Coco was talking the other day about toast. It reminded me how much I love toast and how I lived near a bread bakery when I was in high school. The smell driving by that bakery would push me home to cook up some toast. So, the other day, I had some toast with that homemade almond butter. YUMMY!

I use a Cuisinart. It works fine. I got it as a wedding gift 17 years ago
. It works for everything. I actually killed my blender a few months ago and now just use the Cuisinart for everything.

Daughtry is awesome. I’m so bad at keeping my playlists current. Now I just use Pandora or Spotify. Lazy person with music.
My mother in law actually just told me about microwaving corn this way…she’d heard it recently, too! I might have to try it!

It was so easy! It was even easier to clean the corn when it was cooked instead of before.

I haven’t bought almond butter in a long time. I love the home made version so much more.

It makes it so easy. I cooked up an ear and threw it in some salad – so awesome to have it fresh.
I wish I had a food processor/Cuisinart so I could make sunflower butter. I’m allergic to nuts and they do not have a good (hardly any) selection of sunflower butter here in Scotland.
Sunflower butter is pretty good. I haven’t made it before, but do have some in my fridge. I hope you can find a good brand where you live.
I love sunflower seed butter – I like it better than almond butter.

I’m a sunflower seed fan, and actually just prefer the seeds instead of the butter. I find it to not be as versatile – I really only like sunflower butter on plain crackers in small amounts. Maybe that’s not a bad thing.
Corn in the husk?? In the microwave?? I MUST do this!! Thanks for the tip

Hah! What a surprise to see my name in your post. There is just nothing like the smell of warm bread. I will have to try making nut butter. And the microwace corn on the cob! And that dinner looks great too. I’ve never used wanton wrappers for anythings.

I think I had made that toast the day you posted about toast. Toast was a huge snack favorite for me growing up. Although not with nut butter, I’m sure it was regular butter and sometimes cinnamon sugar when I was a kid.
I SOOO want to make my own nut butters! I think I need a new blender though because it may put it over the edge!! That zuchini recipe looks awesome!!!

Yea, my 17 year old Cuisinart does its best and is smoking hot when it’s done. But, it still works.
Yum. That almond butter looks good. I used to live near a bakery that put out fresh loaves of country bread around 4 and they would be gone in about 4.5 minutes. I got one once or twice and then would sit and eat the whole loaf with a little bit of butter. YUM.
