The recipe called for long grain rice and I didn’t have any, but thought I could sub in some quinoa. Once I got it all going, I realized that the long grain rice was needed when the soup was pureed to thicken it. Oops. Quinoa doesn’t puree so nicely.
Oh well, I didn’t think anyone in my house was going to be in to the soup. I usually make a big batch and freeze single servings to have with my lunch most days. More for me. I forgot to take a picture, but imagine a pureed soup with the little quinoa strings in it. At least Dude actually tasted it.
Then there were the roasted artichokes for dinner.
I usually steam artichokes, but the bag from Costco had a recipe for roasting. We didn’t notice much of a taste difference, but I think they weren’t as runny and drippy wet as they usually are after steaming. They looked pretty. I think it was actually easier, too.
Finally, look at these yummy strawberries. Big giant box from Costco, too. We are working our way diligently through the box. Love Summer Fruit!!
It really was a rest day – breakfast out with a friend who needed a shoulder to lean on. Gave myself a mani-pedi. Folded a few loads of laundry (never get away from that) and then I watched a movie! Barely got it in before having to go get the kids, but it was a nice day. Revolutionary Road – kind of disturbing.

Going to the gym today. I’ve got a scratchy throat and a cough that I’m ignoring since it’s not a chest thing and I feel like I can breathe fine. Do you workout when you’ve got something icky coming? I do.
