Overnight Oats featuring Quest Chocolate Peanut Butter Bar

I have shared my love of overnight oats many times around here. But, I don’t think I’ve shared my most recent variation and my total love for it. The best part about this new creation is that I can mix things up slightly every day and never get bored. Get ready: overnight oats featuring Quest Chocolate Peanut Butter Bar
Here’s the recipe: 1/3 cup old fashioned oats, a sprinkle of cinnamon and 1/3 cup water. Put in fridge overnight.
In the morning, I cut up 1/2 of a Quest Bar. This is a picture of the most amazing new flavor: White Chocolate Raspberry (thank you to to Clark from Quest who generously gave us samples at Fitbloggin of this yummy new flavor. And, I’m not usually a white chocolate fan and I thought it was great)
Some flavors are easier to cut up than others. The Chocolate Brownie and Peanut Butter are pretty hard to cut, while the Chocolate Peanut Butter and the White Chocolate Raspberry are easy.
I get out my oats from the fridge and add about 1/3 cup frozen blueberries, 1 Tbl. ground flax seeds and the cut up Quest Bar. I mix them all up like this:
And stick the whole yummy creation in the microwave for about 1:30 (the softer Quest Bar flavors need a little less time – and your results may vary – test it out a little).
After cooking, I let it all sit for a minute or so and then mix it all up and enjoy. So yummy. Sometimes I’ll add fresh fruit at the end, strawberries are especially good. Just an FYI – the blueberries (or other frozen fruit) are a must. In order to heat the creation long enough to melt the Quest Bar, the oats tend to get a little dry if they don’t have the juicy fruit to help out. Right now I alternate between the Chocolate Peanut Butter Quest Bar and the Peanut Butter Quest Bar. I’ve also tried Cinnamon Roll and Apple Pie – all are amazing and make the oats completely different.
