Oatmeal Banana Muffin Pancakes

It doesn’t take much to encourage me to make pancakes and today is one of those days. It’s Dancing Girl’s Half Birthday! 12 1/2!
My plan for the morning is to hit up bootcamp at 5, get home and shower, pack lunches, make pancakes and get out the door with both kids at 7:40. Think we can do it?
Okay, so while I’m making sure to solidify my status as an insane person, I’ll leave you all with some pancake recipes (the one I’m making today is my Whole Wheat Buttermilk Pancakes)
First – my Oatmeal Banana Muffin Pancakes
I’ve got this great Banana Muffin recipe that I love and my family loves. So, I decided to make it into a pancake. I substituted ground oatmeal in for the flour and left the other ingredients pretty close to the same thing (I think the only difference is the muffin recipe includes butter – hmmm… I wonder if I could leave the butter out of the muffins?)
I love this recipe – So yummy.
1/2 cup ground oats (blend up whole oats)
1 mashed banana (overripe is good)
1/2 serving protein powder
1/2 tsp baking powder
2 Tbl. applesauce
blueberries and a Tbl. of chocolate chips
Another slight variation – minus the banana, add 2 egg whites instead of the whole egg and add 1 Tbl. Almond Butter – yummy! I had these this past weekend and they were great!
The second recipe includes 26g of protein! Love that!
Andn yes, both variations look the same
There are so many slight variations that can be made to this basic pancake recipe. I usually just start with the oatmeal and an egg and go from there based on what I’m in the mood for.
Serve with real Maple Syrup, of course.
