Menu Planning

This is going to be quick – It’s already Sunday night, but I wanted to make sure to link up with Laura and Jill for menu planning for the week.
A familiar tune this week, busy nights, but my husband and I actually talked about meal ideas for the week. We have a protein problem in our house. He likes red meat, I’d easily be a mostly-vegetarian if only cooking for me, our son typically likes chicken only (unless it’s a burger) and our daughter eats very little. And then there’s the side dish options for meals – no one in my house really likes rice, we aren’t huge pasta-based meal fans and I’m the only one who likes beans. Sigh. Maybe that’s why I hate menu planning.
So, here’s the basic plan for the week:
Monday: something shrimp based – maybe a shrimp fried rice? I know I just said we don’t really like rice… but, a really doctored rice would be okay. When I make shrimp, I usually do a pasta, but I’m not in the mood for that. I need something to go with the rice… maybe miso soup?
Tuesday: My husband has a meeting after work, so I’m making this Chicken Tikka Masala recipe just for me. Which is fitting with Best Body Bootcamp starting tomorrow! I’ll make the full portion so there’ll be ample leftovers.
Wednesday: Busy night with carpools and such so probably leftovers.
Thursday:I don’t mind leftovers for a 3rd night
The timing of my husband’s softball game this week means no family dinner either.
Friday: date night – dinner out
Saturday: pre-race meal… I’m thinking pizza again
Sunday: LA Rock n Roll Half Marathon – post race meal, probably a big burger
Thanks for hosting Laura and Jill. I’m so glad I’ve stuck with the challenge, even if this isn’t really a completed menu plan for the week, it’s more than I would have done.

That totally counts! And that sounds so tricky… it’s hard to please everyone. We’re getting to a much pickier phase with L, which makes dinner time more stressful than it used to.

Best of luck with your race on Sunday! Any kind of plan is a plan – and still well worth it for less stress when you’re trying to figure out what’s on the menu later on!
