I’ve got some yummy food to share today!
I’ve been doing some cooking lately… time to share the yummies!
I’ll start from Thanksgiving… oh, well it was actually the day after and the 3rd night of Hanukkah, but I made a turkey and cranberries and Dancing Girl made the latkes:
This is my favorite Thanksgiving recipe – Alton Brown’s Sweat Cornbread Pudding (I think is the official name) – but it’s yummy and easy and yummy.
I was proud of myself for taking the turkey carcass and making tons of broth to stock the freezer.
And then the cranberries have now become the daily topping for my oatmeal – with a fresh orange – so perfect!
I had some remnant veggies from my CSA box last week and did some more cooking.
First were some fresh cranberry and pumpkin muffins. I found this recipe on Pinterest… I subbed out the oil for applesauce and added some mini chocolate chips. They’re just okay. I’ve now frozen them in small amounts and will definitely snack on them in the coming weeks. I think the mini muffins came out to about 50 calories each, and they’re packed full of some good stuff.
Next, I made some potato leek soup with my CSA leeks and some leftover potatoes that never became latkes. Seriously awesome to make a huge batch of soup and not have to buy a single thing from the store. I used the homemade turkey broth in this one. I found the recipe here – didn’t make any changes.
Speaking of latkes – every year I spend a morning making a huge batch of latkes at MMT’s school for the staff. It’s usually part of a holiday lunch that he hosts and it’s this coming Friday. I’ve got 20 lbs of potatoes and all the fixings ready to go… I’ll take pictures and share next week.
Random dinner one night – a butternut squash roasted in the oven with Chinese 5 Spice seasoning. Then I put 2 ounces of goat cheese on it. The cheese got all meltey and was totally amazing!
Okay, so those are the yummy eats from the last few weeks. See anything you might want to try? Ever made muffins with fresh cranberries? That was a new one for me. Any other goat cheese fans? We have tons leftover from Thanksgiving appetizers and I’ve been having a goat cheese and prosciutto sandwich for lunch the last few days. YUM!!!
