WIAW – what happens when I don’t meal plan

Since I started working, I haven’t been doing that much cooking for my family. We do still have family dinners together as much as a family with busy kids can do, but I don’t do a lot of the cooking.
When I do cook, it’s usually more interesting than my picky eaters care to enjoy. But you all can enjoy a little WIAW.
The funniest part about not doing so much cooking lately, is that I’ve become a very disorganized cook. Last weekend, I had an avocado left from my last CSA box and decided that it needed to be taco night. And I wanted to make margaritas. When it came time to actually cook, I realized I needed to go to the store to get a few more things. Namely, taco seasoning, olives and lettuce for the tacos and salt for the margaritas. At least I had the meat, tortillas and cheese. 50% isn’t that bad. I seriously need to start doing some better menu planning.

Then, last week, I was inspired by my friend Coco’s avocado baked egg and I *needed* to make one. My first try was a total fail. Petey pulled the foil off the counter and sent the egg flying to the floor.
I was able to make another one that was so yummy, I had to repeat it over the weekend. The 2nd time around, I made one for MMT, too. So amazingly yummy – the second time around, I got the runniness of the egg just right.
I had a ton of leftover cherry tomatoes from the nutrition lesson at my son’s school last week so I tried to make stewed tomatoes. There was absolutely no recipe involved here. I just cooked a little garlic in olive oil, added the tomatoes and more of my frozen stash of turkey broth and cooked for a long time.

And finally – I wrote a whole post a while back about packing great lunches… but, let me be perfectly honest and say that I’ve gotten lazy. I’ve fallen out of the routine of making those awesome lunches, and usually just pack a sandwich. While I’d love to have nut butter and jelly sandwiches every day, I usually end up with lunch meat. At least I’ve found this great and little bit healthier lunch meat option at the regular grocery store. I love all the natural and organic products that are becoming easier to find.
